WE’RE HIRING AN ASSISTANT COMMISSARY MANAGER, BASED IN THE CHICAGO
The Assistant Commissary Manager will be responsible for managing Commissary operations including setting daily production numbers, aiding in production, packing, and inventory. This role will assist the Commissary Manager to create an efficient work environment and make sure all Commissary orders are fulfilled accurately and on time. You will be responsible for supporting high operational standards by continuing to hold yourself and your team members to the provided checklists, recipe specs, and other standardized tools. As an Assistant Manager, you’ll be an enthusiastic leader for your team, lead by example, and hold yourself and all team members accountable for their performance and product output through our CYM Values (“VIBES”).

YOU'LL CRUSH THIS ROLE IF YOU...
- Have 2+ years of experience as a baker or prep cook and understand what it takes to keep a fast-paced food production environment running smoothly.
- Bring at least 1 year of supervisory or leadership experience in a food production facility, Commissary, or high-volume kitchen.
- Have a strong understanding of food production, inventory management, food safety standards, labor scheduling, and cost control.
- Hold a current ServSafe Manager Food Safety Certification and know food safety and sanitation standards like the back of your hand.
- Are highly organized and can confidently balance multiple responsibilities while keeping production on track and meeting deadlines.
- Are comfortable using computer systems and can quickly get the hang of new software.
- Believe memorable hospitality starts with consistently delivering high-quality products that guests love.
- Have developed strong, diverse teams through clear communication, thoughtful coaching, motivation, and accountability.
- Lead by example with a hands-on, roll-up-your-sleeves mentality and are always ready to jump in alongside your team.
- Bring positive, high-energy vibes and thrive in a fast-paced environment where no two days are exactly the same.
- Stay calm under pressure, identify problems, and approach challenges with a solutions-first mindset.
- Can work a flexible schedule, including weekends, holidays, evenings, overnight shifts, and at multiple Commissary locations as business needs require.
- Have a valid driver’s license and a clean driving record.
- Speak Spanish—or are working on it! Spanish language skills are preferred.

WHAT YOU’LL REALLY BE DOING
- Partner with the Commissary Manager to lead day-to-day operations—from production and inventory through distribution—ensuring every shift meets CYM’s highest standards.
- Bring the CYM vision to life by helping the team understand our goals, uphold our standards, and deliver the quality our shops and guests count on.
- Lead daily production, ensuring recipes, quality standards, food safety practices, and production schedules are followed consistently.
- Support labor, inventory, food cost, and waste management while keeping operations efficient, products exceptional, and team vibes high.
- Keep ingredients and supplies flowing by receiving deliveries, maintaining accurate inventory records, coordinating reorders, and preventing shortages before they happen.
- Champion food and workplace safety, ensuring every Commissary area meets health regulations, cleanliness expectations, company policies, and CYM safety standards.
- Build and develop a strong team through thoughtful training, coaching, and ongoing support—reinforcing safe work practices, operational standards, and company values along the way.
- Keep the details organized by managing timekeeping audits, invoice approvals, inventory reporting, Commissary-to-shop transfers, and other operational documentation.
- Partner with vendors, suppliers, and service providers to keep deliveries on schedule, equipment running smoothly, and operational issues moving toward resolution.
- Monitor production accuracy, packaging, and order fulfillment to ensure every shop receives the right products at the right time.
- Track food waste and portion control while identifying opportunities to improve efficiency and reduce production costs without sacrificing quality.
- Maintain clear communication with shop teams, Supply Chain, and Commissary leadership to keep daily operations running smoothly and resolve challenges quickly.
- Step into leadership when the Commissary Manager is away, providing calm, organized direction and helping the team navigate changing priorities.

The physical demands for this position include seeing, hearing, speaking, reading, and communicating effectively; standing, walking, reaching, bending, and performing repetitive physical movements; lifting up to 50 pounds; and safely operating equipment and tools using manual dexterity.
